Aloo Gobi – Cauliflower with Potatoes and Curry

Ingredients:

  • ½ cauliflower cut into small florettes
  • 1 large potato peeled and cut into 1” cubes
  • 1/2 onion grated
  • 1 garlic clove grated
  • 1 tsp fresh ginger grated
  • 1 tbsp ground cumin
  • 1 tbsp. Garam Masala or Curry powder
  • 1 tsp ground turmeric
  • 3 oz. Organic Puttanesca Tomato Sauce Add to cart
  • Salt and pepper
  • Olive oil for cooking
  • Fresh herbs such as cilantro, parlsey or basil for decorating.

Preparation:

  1. Saute the cumin in a olive oil over low heat until aromatic, about 1 minute.
  2. Add the onion, garlic, and ginger, and sauté for about 1 minute.
  3. Add the potato cubes, well, and cook, covered, mixing every now and then, for about 4 minutes.
  4. Add the cauliflower, mix well, and cook covered for another 4 minutes.
  5. Remover cover, add the spices, and cook about 30 seconds.
  6. Add the tomato sauce, mix well, and cook on high a couple of minutes until vegetables are cooked through.
  7. Adjust for salt and pepper, decorate with chopped fresh herbs and serve hot.
