Eggplant Rolls by Erin Gleeson – The Forest Feast — Delicious & Sons

Ingredients:

Preparation:

  1. Slice the eggplant lengthwise into thin slabs, removing the stem.
  2. Brush with olive oil on both sides.
  3. Grill the eggplant slices on both sides on a grill pan until golden and tender with grill marks.
  4. Allow to cool
  5. Place 1 teaspoon of pesto, one slice of cheese and a pinch of arugula in the middle of each.
  6. Roll each, starting with the wider end of the eggplant slice.
  7. Enjoy at room temperature.
