This chickpea salad combines various Mediterranean traditions and flavors in one easy-to-make, healthy and delicious salad. We’re inspired by a traditional Greek salad with feta cheese and onion, we add a Middle Eastern touch with baby chickpeas, and bring it all together with an Italian-style dressing of sun-dried tomatoes. It can be thrown together in just a few minutes, can be a great starter, a hearty lunch on its own, and great for picnics too.

Ingredients:
For the salad:
- 1 lb. chickpeas, cooked, rinsed, and drained
- 1 cup feta cheese in small cubes
- 12 cherry tomatoes halved
- 1 small red onion finely chopped
- 2 tbsp. Fresh parsley chopped
For the dressing:
- 2 tbsp. Organic Sun-Dried Tomato Spread
- 4 tbsp. Extra Virgin Olive Oil
- 2 tbsp. Red Wine vinegar
Salt and pepper
Preparation:
- Toss all the salad ingredients together in a salad bowl, add salt and pepper
- In a small bowl, mix the Sun-Dried Tomato Spread with vinegar until blended
- Drizzle in the oil while mixing for a smooth consistency
- Pour over salad and toss
