Traditional Christmas Chicken Stew with Prunes and Dried Apricots — Delicious & Sons

Ingredients:

Preparation:

  1. Heat olive oil in a pan on medium and add the chopped onion, garlic heads sliced in half in a cross section along all the cloves, and the pine nuts.
  2. Sauté for 8 minutes
  3. Add half the wine and let evaporate around 1 minute.
  4. Add the Tomato & Porcini Mushroom Sauce and bring to a boil.
  5. Transfer the contents of the pan to a large pot with a cover and that is tall enough for the chick to fit inside covered.
  6. Add half the stock and mix well.
  7. Place the chicken on top and baste with several spoonful of the sauce.
  8. Cover the pot and cook on low heat for one hour.
  9. Check periodically to make sure it does not stick or dry out. Add liquid if needed.
  10. After one hour, turn the chicken over, add the rest of the stock and white wine, the apricots, and the prunes, and mix well.
  11. Cover and cook for another hour or until the chicken is cooked.
  12. Remove from heat and let sit for five minutes.
  13. Carve the chicken and serve hot with the sauce.
