Greek style chickpea salad with sun-dried tomato

This chickpea salad combines various Mediterranean traditions and flavors in one easy-to-make, healthy and delicious salad. We’re inspired by a traditional Greek salad with feta cheese and onion, we add a Middle Eastern touch with baby chickpeas, and bring it all together with an Italian-style dressing of sun-dried tomatoes. It can be thrown together in just a few minutes, can be a great starter, a hearty lunch on its own, and great for picnics too.

Our Sun-Dried Tomato Spread is organic, non-GMO, gluten-free, and apt for both vegetarians and vegans.

Ingredients:

For the salad:

  • 1 lb. chickpeas, cooked, rinsed, and drained
  • 1 cup feta cheese in small cubes
  • 12 cherry tomatoes halved
  • 1 small red onion finely chopped
  • 2 tbsp. Fresh parsley chopped

For the dressing:

Salt and pepper

Preparation:

  1. Toss all the salad ingredients together in a salad bowl, add salt and pepper
  2. In a small bowl, mix the Sun-Dried Tomato Spread with vinegar until blended
  3. Drizzle in the oil while mixing for a smooth consistency
  4. Pour over salad and toss
