Ingredients:
- ½ cauliflower cut into small florettes
- 1 large potato peeled and cut into 1” cubes
- 1/2 onion grated
- 1 garlic clove grated
- 1 tsp fresh ginger grated
- 1 tbsp ground cumin
- 1 tbsp. Garam Masala or Curry powder
- 1 tsp ground turmeric
- 3 oz. Organic Puttanesca Tomato Sauce
- Salt and pepper
- Olive oil for cooking
- Fresh herbs such as cilantro, parsley or basil for decorating.
Preparation:
- Saute the cumin in olive oil over low heat until aromatic, about 1 minute.
- Add the onion, garlic, and ginger, and sauté for about 1 minute.
- Add the potato cubes, well, and cook, covered, mixing every now and then, for about 4 minutes.
- Add the cauliflower, mix well, and cook covered for another 4 minutes.
- Remover cover, add the spices, and cook about 30 seconds.
- Add the tomato sauce, mix well, and cook on high a couple of minutes until vegetables are cooked through.
- Adjust for salt and pepper, decorate with chopped fresh herbs and serve hot.
